Barbecued
Duck Breasts on Sweet Corn Pancakes This barbecue sauce is also excellent on chicken, pork or beef
4 boneless duck breasts, trimmed
1 tablespoon minced garlic
1 tablespoon minced shallot
1 tablespoon minced gingerroot
1 tablespoon sesame oil
1/2 cup soy sauce
1/2 cup barbecue sauce
1/4 cup hoison sauce
1/4 cup packed brown sugar
1/4 cup rice wine vinegar
Sweet Corn Pancakes (recipe follows)
Rinse the duck and pat dry.
Sauté the garlic, shallot and gingerroot in the sesame
oil in a saucepan. Add the soy sauce, barbecue sauce, hoison
sauce, brown sugar and wine vinegar and mix well.
Simmer for 10 minutes, stirring occasionally. Let stand until
cool. Brush the duck with the barbecue sauce.
This barbecue sauce may be prepared
in advance and stored in the refrigerator for up to 4 weeks.
Grill the duck over hot coals or broil for 8 to 10 minutes
or until cooked through, basting with the sauce frequently. Let
stand for 4 to 5 minutes before slicing.
Place the Sweet Corn Pancakes on 4 dinner plates. Cut the
duck cross grain into thin slices. Arrange over pancakes.
Bring the remaining sauce to a boil; drizzle the sauce around
the outer edge of the plate.
Makes 4 servings.
Sweet Corn Pancakes
1 pound frozen corn, thawed
2 eggs
1/4 cup finely chopped onion
2 scallions, finely chopped
1 clove of garlic, minced
3/4 cup flour
1/4 cup cornmeal
1 tablespoon baking powder
1 1/2 teaspoons salt
1 1 /2 teaspoons sugar
1 1/2 teaspoons crushed red pepper
Vegetable oil for frying
Process 1/2 of the corn in a food processor until pureed.
Mix with the remaining corn, eggs, onion, scallions and garlic.
Combine the flour, cornmeal, baking powder, salt, sugar and
red pepper in a bowl and mix well. Stir in the corn mixture.
Chill, covered, in the refrigerator.
Heat a small amount of oil in a nonstick skillet. Pour enough
batter into the skillet to form a 3- to 4-inch pancake.
Bake until brown on both sides, turning once. Repeat the process
with the remaining batter.
May prepare pancakes in advance, store in the refrigerator
and reheat in the oven just before serving.
