Georgia Peach Fritters
Yield: 4 dozen

  • 2 cups flour, sifted
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1/3 cup butter
  • 1/2 cup sugar
  • 1/2 teaspoon vanilla extract
  • 2 eggs, beaten
  • 3/4 cup milk
  • 1 1/2 cups chopped peaches
  • 1/2 teaspoon lemon juice
  1. Sift the flour, baking powder and salt together. Cream the butter, sugar and vanilla in a mixer bowl until light and fluffy. Beat in the eggs. Beat in the dry ingredients alternately with the milk. Combine the peaches and lemon juice in a bowl and mix well. Fold into the batter. Drop by teaspoonfuls into deep 365-degree oil. Deep-fry for 3 to 4 minutes or until golden brown, turning once. Drain on paper towels. Serve with whipped cream or sprinkle with confectioners'
    sugar.
