• 1 tablespoon unsalted stick margarine
• 2 cups sliced mushrooms I garlic clove, minced
• 2 cups low-sodium vegetable broth
• 1 (14 1/2 oz.) can Italian-style stewed tomatoes (no salt added)
• 3 cups frozen cheese tortellini
• 1 (10 oz.) pkg. frozen chopped spinach, thawed and squeezed dry
• pepper, to taste

1. In a large nonstick saucepan, melt the margarine. Add the mushrooms and garlic; cook until softened, 2-3 minutes. Add the broth, tomatoes and 3 cups water; bring to a boil. Add the tortellini; return to a boil.
2. Reduce the heat and simmer, until the tortellini are cooked, about 10 minutes.
3. Stir in the spinach and return to a boil.
4. Add pepper to taste.
