Kyle says...
"I invented these one day when I got hungry while we were baking in the Test Recipe."

Always wash your hands thoroughly after handling eggs.

For an extra-delicious crust, brush with butter right after you take them out of the oven.

Make these the night before, store in refrigerator and reheat the next morning for an easy "breakfast-to-go."

Tools
dough cutter, rolling pin, large spoon, small bowl of water, baking sheet

  • Dough Recipe
  • 1 1/4 cups water
  • 3 cups white bread flour
  • 2 tbsp. dry milk
  • 2 tbsp. sugar
  • 1 1/2 tsp. salt
  • 2 tbsp. butter
  • 1 1/2 teaspoons fast rise yeast or 2 teaspoons active dry yeast
  • Fillings
  • 6 eggs, scrambled and seasoned to taste
  • baker's choice
  • grated cheese
  • salsa
  • chopped ham
  • bacon bits
  1. Scramble eggs and set aside. On lightly floured work surface, cut dough in four equal pieces.
  2. Roll or pat each piece into a 6-inch circle. Spoon scrambled eggs onto the center of each piece.
  3. Add whatever other breakfast fillings you like.
  4. Stretch the sides of dough up around the fillings. Pinch well to seal tightly.
  5. Turn seam side down and gently form an oval "egg" shape between your hands. Preheat oven to 375 degrees F.
  6. Let rise 10 minutes. Bake at 375 degrees until golden brown, about 20 to 22 minutes. Let cool slightly and enjoy! Refrigerate leftovers.
