A compilation of'child-tested' recipes created by Family Day Care Providers for the children in their care. It took us our first 15 years to collect all of these recipes. The providers are in Western & Central Connecticut and feed over 600 meals each day to almost 1,000 children between the ages of 1 month and 12 years.

Banana-Orange
Softies

Yield: 22 cookies

cups mashed ripe bananas (about 3)

3/4
cup margarine, softened

1/2
cup orange juice

eggs
-
2
tsp. vanilla
-
1
tsp. grated orange peel

cups uncooked oats
-
2
cups flour
-
3/4
tsp. baking soda
-
1/2
tsp. nutmeg

3/4
cup raisins
-
Heat
oven to 350F.

Combine
bananas, margarine, and orange juice. Blend in eggs, vanilla, and orange
peel. Add combined ingredients and raisins; mix well.

Drop
by rounded tablespoonful onto greased cookie sheet. Bake 20 to 22 minutes,
or until light golden brown. Cool 1 minute on cookie sheet; remove to wire
cooling rack.
Icing:
Combine
powdered sugar, orange juice, and peel. Drizzle over cookies.
Store in
tightly covered container.
