Eggs in Bread Cups

Servings: about 4 to 6

• 6 slices bread, crusts removed
• 6 large eggs

Pantry

• 1/4 cup melted butter or margarine
• Salt and Pepper to taste

1. Position the rack in the center of the oven and preheat to 400 degrees. Lightly grease a 6-cup muffin pan.
2. Rollout the bread slices until flattened and brush with the butter. Press into the prepared muffin cups and top with the eggs without breaking the yolk. Season to taste and top with a drop of butter.
3. Bake for about 15 or 20 minutes or until the whites of the eggs are set and the edges of the bread are toasted. Remove from the oven and serve.
