Researching the materials for my Exotic Fruit posters and cookbook (Celestial Arts/Ten Speed Press) was a labor of love and continual discovery. As we all become more knowledgeable about Asian and Latin cooking in the United States, the fruits that have long been a part of these culinary traditions are now nourishing us and becoming interwoven into our recipes. The fruits used here are not nearly as exotic as some that may be available in your local markets; feel free to mix and match as you can!

When making salsa like this, I like to use my hands to mix the ingredients. They're the most gentle tools we have. This salsa is best used the same day; keep it no longer than the next day after you've made it.

Yield: About 3 cups.

  • 3/4 cup peeled and seeded papaya, diced small

  • 3/4 cup peeled and pitted mango, diced small

  • 3/4 cup peeled and cored pineapple, diced small

  • 1/2 cup dried black beans, cooked (1 1/4 cups cooked beans)

  • 1 Scotch bonnet chile, seeded and minced

  • 1/2 cup red onion, diced small

  • 1 tablespoon virgin olive oil

  • 2 tablespoons Spanish sherry vinegar

  • 1 1/2 tablespoons roughly chopped cilantro

  • Salt and black pepper to taste

  1. Thoroughly combine all the ingredients in a mixing bowl.
