Brown Rice Waldorf Salad

This is a great dish to serve at home or take to a luncheon. It will probably be the only one like it there. I can assure you, you will be asked for the recipe!

Makes 8, one cup servings

  • 1 1/4 cups boiling water

  • 1 cup instant brown rice (Uncle Ben's)

  • 4 medium red apples, diced (do not peel)

  • 2 tablespoons lemon juice (fresh, or frozen Minute Maid)

  • 2 tablespoons apple juice concentrate

  • 3 celery ribs, thinly sliced (1 1/2 cup)

  • 1/2 cup chopped pecans

  • 1/2 cup raisins

  • 1 cup plain nonfat yogurt

  • 1/2 teaspoon cinnamon

  • 1/4 teaspoon nutmeg

  • 1/4 teaspoon allspice

  1. Add rice to the boiling water. Turn to lowest heat; cover and simmer for 10 minutes. While it cooks, chop the apples in a serving bowl and add lemon juice to coat the apples. Add the remaining ingredients, including the cooked rice; stir well. Serve immediately or chill for later.

  2. This is a wonderful meal that is filling, low fat, nutritious, and packed with energy. This is one of our favorite meals, and I love it because I can fix it ahead and have it waiting in the fridge.

  3. * Remember that you can use regular brown rice. In fact, I like the taste and texture of regular rice, but it does take longer to cook. Use whichever you like.
