Chicken Surprise

I cannot describe to you the fantastic flavor this dish has - you just have to experience it for yourself! I call it 'Chicken Surprise' because the flavor is unusual, but delicious.

Makes 6 servings

  • 1 can (14 1/2 oz) chicken broth (Swanson, 1/3 Less Sodium)

  • 2 cups instant brown rice (Uncle Ben's)

  • 1 can (15 oz) black beans (Ranch Style)

  • 1 cup bite-size, cooked chicken

  • 1/2 cup plain, nonfat yogurt

  • 1/3 cup sliced almonds

  • 2 teaspoons soy sauce

  • 1/4 teaspoon pepper

  • 1/4 teaspoon poultry seasoning

  1. Heat broth to boiling; add rice, cover and simmer on lowest heat for 10 minutes.

  2. While rice is cooking, combine remaining ingredients in a large serving dish. As soon as rice is done, add to serving dish. Mix well and serve immediately. That's all!

  3. If you want to garnish this dish, some slices of tomato or red pepper would be great around the edges, along with some sprigs of parsley. Then sprinkle a few sliced almonds on top.

  4. (You can use Louis Rich Oven Roasted Turkey Breast in place of cooked chicken. Or you can use leftover turkey.)

  5. Suggestion: Make a big batch and freeze it for future meals

  6. Serve some steamed vegetables with this dish; such as broccoli and cauliflower or cabbage.
