Butterscotch Pudding

This butterscotch pudding is also delicious when put in a pre-cooked pie shell or graham crust and topped with whipped cream.

1 baked 9-inch pie shell. Stove top required.

  • 1 cup brown sugar

  • 2 tablespoons cornstarch

  • 3 tablespoons flour

  • 1/2 teaspoon salt

  • 2 eggs

Mix above ingredients very thoroughly.

  • 2 cups warm milk

  • Add the milk and cook over medium hat, boiling for 3 minutes or until thickened. Remove from heat and add

2 tablespoons butter

1 teaspoon vanilla

  • Pour into a pie crust or dish and cover with plastic wrap to prevent a skin from forming as it cools.


  • Put into individual serving containers or pre-cooked tart shells to send in lunches.
