Makes 8-12 mini-loaves.

• 2 cups mashed cooked beans- any kind

• 1/2 cup cooked rice

• 1 tablespoon chopped onion

• 1 cup finely grated carrots

• 2 teaspoons chicken or vegetable soup base or salt and pepper to taste

• 2 eggs, beaten

• 2 tablespoons Picante Sauce

• 1 teaspoon cumin

• 1 cup bread crumbs

1. Mix all ingredients, adding a small amount of water, if necessary, to hold mixture together.

2. Fill muffin tins, coated with cooking spray, full and mound top slightly.

3. Lightly cover with foil and bake at 350 degrees F for 45 minutes.

4. Top with grated cheese 10 minutes before done, if desired.

Options: Bake in loaf pan or shape into patties and pan fry.
