Star Anise Ice Cream
Kem Canh Hoi) Recipe from: Authentic Vietnamese Cooking by Corinne Trang Cookbook Heaven at Recipelink.com In this ice cream, a vanilla custard is infused with star anise, a dry spice used in many Asian cuisines. The vanilla bean can be reused 2 to 3 times, so do not discard it after making the custard. (Blot it dry prior to putting it away.) If you feel up to it, try infusing the custard with fresh lemongrass (see Variation). Both versions are interesting, refreshing, and bound to be conversation starters after an elaborate meal.
