In general, Smoothies are blended drinks that serve as either meals or in-between- meal snacks, depending on the recipe. Smoothies require a blender, a recipe that includes fluid (usually a juice) and about one cup of a fruit or similar food. If using frozen fruit, no ice is needed. However, if using fresh ingredients, you will have to add about three quarters of a cup of ice. When preparing smoothies, first put the juice in the blender, then the fruit, and finally any other additives. Start your blender at low and move up to puree mode. You will need to run your blender for 2 or 3 minutes to complete the smoothie.!

Pesto

When it comes to pesto, a blender is good, but a food processor is better. Pesto means paste. We think of pestos as spreads and sauces. Basically you can put everything in at the same time, though it's best to put your fluids in first. Run the processor on pulse. Pulse means to chop intermittently. It's a tap-tap-tap motion. Again, you need to experiment to see what textures are best for you needs. Th pulse mode will give you the best results.

Roasted Pepper Pesto

  • 2 red bell peppers

  • 1 yellow peppe

  • 1 Anaheim pepper

  • 3 to 4 cloves of garlic

  • 1 teaspoon oregano

  • 1/3 cup basil leaves

  • 1/4 cup teaspoon crushed red peppers

  • 1 1/2 tablespoons virgin olive oil

  • 1 tablespoon red wine vinegar

  • 1/2 teaspoon Mrs. Dash salt substitute

  • 1/2 teaspoon fresh cracked pepper

  1. Preheat oven to 475 degrees F. Place peppers on a baking sheet and roast for about 15 minutes, checking every few minutes. They should be blistered all over and slightly charred. Place peppers in a covered container for a few minutes and remove skins, stems and seeds. Place in a food processor with remaining ingredients and chop on pulse mode until thoroughly blended. This should take only a few pulse actions. Taste and adjust sale and pepper as needed.

Avocado Salsa

  • 1 ripe avocado

  • 1 clove garlic, minced

  • 2 fresh tomatoes, chopped

  • 3 green onions, sliced

  • 1/4 teaspoon cumin

  • 1 dash toasted sesame oil

  • 1/4 cup chopped cilantro

  • 1 dash hot sauce

  1. Mrs. Dash salt substitute and pepper to taste
