Kitchenware: chef's knife, small saucepan, wooden spoon, pastry brush
Preparation Time: 15 minutes
Cooking Time: 10 minutes Do-Ahead: The butter can be prepared 3 days in advance, cooled to room temperature, and stored, covered, in the refrigerator.
8 tablespoon (1 stick) unsalted butter, at room temperature
3 tablespoons finely chopped red onion
1 medium clove garlic, finely minced
1/2 teaspoon finely minced ginger
1/2 teaspoon curry powder
1/4 teaspoon salt
12 hamburger buns
Heat 2 tablespoons of the butter in the saucepan over medium heat and saute the onion for 3 minutes, until it is limp and translucent. Add the garlic and continue to saute for 1 minute.
Add the remaining 6 tablespoons butter, the ginger, curry, and salt to the saucepan and blend the ingredients with a wooden spoon. Simmer the butter over medium-low heat for 4 minutes to meld all the seasonings.
Service: Brush the buns with the butter mixture.
Cook's Tips: Substitute pita pockets for the hamburger buns.
