Makes: 4 pints

  • 1 quart sliced green mangoes

  • 2 or 3 green peppers, chopped

  • 1 large onion, chopped

  • 2 hot peppers, cut very fine, (remove seeds unless very hot flavor is desired)

  • 1 clove of garlic, sliced

  • 1 tablespoon salt

  • 1 cup grapefruit juice

  • 1 cup cider vinegar

  • 1 pound brown sugar

  • 1 pound seedless raisins

  • 1 tablespoon white mustard seed

  • 2 teaspoons each of allspice, cinnamon and cloves

  • 1 (3-ounce) package sliced almonds (optional)

  • 1 or 2 tablespoons finely chopped crystallized ginger (optional)

  1. Combine first 6 ingredients. Let stand for 1 hour. Drain. Heat the grapefruit juice, vinegar, sugar, raisins, mustard seed and spices. Add mango mixture. Boil 30 minutes (if pressure cooker is used, cook 15 minutes). Seal while hot.
