Sweet Potato Souffle

  • 1/4 cup butter

  • 1/4 cup all-purpose flour

  • 1 1//2 cups half and half

  • 5 large eggs (room temperature), separated

  • 1/4 cup grated Cheddar cheese

  • 3 cloves garlic, crushed

  • 1 1//2 teaspoons salt

  • 1/4 teaspoon pepper

  • 1/4 teaspoon cream of tartar

  • 1 1/2 cups cold mashed sweet potatoes

  1. Preheat oven to 375 degrees.

  2. Grease a 2-quart souffle dish with a collar extending 3 inches above the rim.

  3. Melt butter in a large saucepan. Mix in flour and cook, stirring constantly, for 1 minute. Blend in the half and half; cook over low heat, stirring constantly.

  4. Stir in egg yolks, 1 at a time. Stir in cheese, garlic, salt, and pepper, beating well after each addition.

  5. Stir mashed potatoes into the egg mixture, and set aside.

  6. In a large bowl, beat the egg whites with cream of tartar until stiff peaks form. Fold egg whites into the potato mixture.

  7. Pour potato mixture into prepared dish.

  8. Bake souffle until the top is puffy and golden, approximately 50 minutes. Serve immediately
