Stuffed Pork Tenderloin

  • 1 1/4 pound pork tenderloin

  • 2 tablespoons butter

  • 1 cup packaged dry-herb-flavored or sage-and-onion-flavored stuffing mix, or 1 cup small dry bread cubes plus 1/4 teaspoon poultry seasoning

  • 1/2 cup chopped apple

  • 2 tablespoons raisins

  • 2 tablespoons apple juice

  • Salt and pepper to taste

  1. Preheat oven to 350 degrees.

  2. Slice the tenderloin lengthwise, but do not cut completely through. Spread the halves open. Place plastic wrap over them, and use a meat mallet to flatten to an even thickness.

  3. Melt the butter and combine with the bread stuffing, apple, raisins, and apple juice. Add salt and pepper to taste.

  4. Spread the stuffing over the pork to within 1/2 inch of all edges. Beginning from the short end, roll the tenderloin like a jelly roll. Tie securely in three places with white kitchen string.

  5. Bake for 45-50 minutes or until a meat thermometer reads 160 degrees.

  6. After removing from the oven, allow to stand (covered with foil) for about 15 minutes before slicing.
