Chocolate Pudding Cake (crock pot)
Recipe from: The Everything Slow Cooker Cookbook
by Margaret Kaeter
Cookbook Heaven at Recipelink.com

Servings: 8
Cooking Time: 3-4 hours
Preparation time: 15 minutes
Attention: Minimal
Pot size: 4-6 quarts

  • 2 cups packaged chocolate cake mix

  • 1/2 cup instant chocolate pudding mix

  • 2 cups sour cream

  • 4 eggs

  • 1 cup water

  • 3/4 cup vegetable oil

  • 1 cup semisweet chocolate chips

  1. Combine the cake mix, pudding mix, sour cream, eggs, water, and oil in a medium-sized mixing bowl. Beat with an electric mixer or by hand with a wooden spoon until mixture is creamy. Stir in the chocolate chips.

  2. Pour into a 2-pound coffee can. Place the coffee can inside the slow cooker. Cover and cook on low setting for 3 to 4 hours. Because this cake is more moist than others, a toothpick inserted into the center will never come out completely clean. Look for moist crumbs instead of batter to ensure it is done.

Make homemade whipped cream by beating whipping cream on a high speed with a hand mixer. Add a bit of vanilla and confectioner's sugar to give it more flavor.
