1 package active dry yeast (1 tablespoon) dissolved in 1/4 cup lukewarm water
1 egg
1 teaspoon maple extract
1/2 teaspoon salt
Filling:
1/2 cup granulated sugar
1/3 cup chopped pecans
1 teaspoon ground cinnamon
1/4 cup melted margarine
Icing:
1 cup confectioners' sugar
2 tablespoons melted margarine
1 tablespoon milk or water
1/2 teaspoon maple extract
In a small saucepan, heat the milk and margarine until lukewarm. In a large mixer bowl, blend the milk mixture, 1 cup of the flour, and the granulated sugar, yeast mixture, egg, maple extract, and salt at low speed until the dry ingredients are moistened. Beat 2 minutes by hand, stir in the remaining flour to form a soft dough. Knead it on a floured surface until smooth and elastic (about 2 minutes). Place the dough in a lightly buttered bowl, turning it to coat it with butter. Cover the dough, and let it rise in a Warm place until it has doubled in size.
For the filling, combine the granulated sugar, pecans, and cinnamon in a small bowl, and set aside. Lightly grease a 12 inch round pizza pan. Punch the dough down, divide it into 3 pieces, and shape them into balls. Roll or press 1 ball of dough into the bottom of the prepared pizza pan. Brush the dough with about one-third of the melted margarine, then sprinkle with one-third of the pecan mixture. Roll out the other 2 balls of dough, and add layers of dough, melted margarine, and the pecan mixture to the first layer.
To shape the rolls, place a glass about 2 inches diameter in the center of the dough. With scissors, cut from the outside edge to the glass, forming 16 pie-shaped wedges. Twist each wedge 4 times. Remove the glass. Let the dough rise until it has doubled in size. Bake the rolls in a pre heated 350 degree oven for 20 minutes. Cool 5 minutes. In a small bowl, blend together the confectioners' sugar, margarine, milk, and maple extract until smooth. Break off the rolls, and drizzle them with the icing.
