Slow Cooker Pork Chalupas

Makes 4 servings

  • 2 pound pork tenderloin, cut into 1-inch pieces (4 cups)

  • 2 cans (15 to 16 ounces each) red kidney beans, rinsed and drained

  • 1 can (8 ounces) tomato sauce

  • 1/4 cup canned chopped green chiles

  • 4 large cloves garlic, minced

  • 2 tablespoons white vinegar

  • 5 teaspoons chili powder

  • 5 teaspoons ground cumin

  • 2 teaspoons dried oregano leaves

  • 1 teaspoon salt

  • 1/2 teaspoon coarse black pepper

  • Flour Tortillas (6 to 8-inches in diameter)

  • Condiments: Sour cream, chopped onion, chopped tomatoes, shredded Cheddar cheese

  1. MENU: Rice and tossed salad with salad dressing


  2. Spray slow cooker and underside of lid with nonstick cooking spray.


  3. Place pork in slow cooker. Mix all ingredients except tortillas; pour

  4. mixture over pork. Do not stir.


  5. Cover and cook on low setting 8 to 9 hours. Do not remove lid during

  6. cooking.


  7. Place tortilla on individual serving plates. Spoon pork mixture over

  8. tortillas. Top with desired condiments.
