Mo's Potato Salad

This is my family's favorite recipe. Whenever anyone eats it they always want the recipe. - Maggie McCormack

  • Ingredients for Dressing:

  • 1/2 cup cider vinegar

  • 1/4 cup vegetable oil

  • 1 1/2 teaspoon salt

  • 1 tsp. pepper

  • Ingredients for Salad:

  • 8 large red potatoes (3-1/2 lbs.)

  • 1 tablespoon Dijon mustard

  • 1 1/2 cups mayonnaise

  • 1/4 cup milk

  • 1 1/2 cups celery, chopped

  • 1/2 cup red onion, chopped

  • 8 slices bacon, cooked and crumbled

  • 1/4 cup parsley, chopped

  • 4 hard boiled eggs, chopped

  1. Whisk all dressing ingredients in large bowl until blended.

  2. In saucepan, cover potatoes with water, bring to a boil. Simmer covered for 20-25 minutes until tender. Remove skins while warm.

  3. Cut potatoes into 1-inch chunks. Add to dressing, mix and stir until dressing is absorbed.

  4. In separate bowl, mix mustard, mayonnaise and milk. Add celery, onion, bacon and 2 tablespoons of parsley. Mix well.

  5. Add to potatoes and mix. Cover and chill 2 hours to 2 days.

  6. Before serving garnish with remaining parsley and hard- boiled eggs.
