When you arrive home at 5 or 6 P.M. from car pooling, soccer, dance lessons, doctor's appointments, etc., the chicken will be ready. Tastes great the next day also. - Vicky Luckower

  • 2 Ibs. boneless and skinless chicken thighs

  • 2 cans (32 oz.) crushed tomatoes

  • 2 onions, diced

  • 2 green peppers, diced

  • 1 teaspoon Herbes de Provence (optional)

  • salt and pepper, to taste

  1. Put all ingredients into a large (4 quart) slow cooker or crock pot in the morning and set on high.

  2. Serve with rice or pasta.
