Chicken Salad in Raspberry Ring

Spectacular in appearance and taste.

  • CREAMY MAYONNAISE:

  • 1 cup mayonnaise

  • 1/2 cup heavy cream, whipped

  • --------------------------------------------------------

  • Combine mayonnaise and whipped cream. Makes 1 2/3 cups.

  • --------------------------------------------------------

  • CHICKEN SALAD:

  • 2 cups cubed cooked or canned chicken

  • 1 teaspoon salt

  • 2 hard-cooked eggs, chopped

  • 3/4 cup sliced celery

  • 1 teaspoon lemon juice

  • 1/2 cup Creamy Mayonnaise

  • --------------------------------------------------------

  • Lightly toss all ingredients together. Chill. Serve in Raspberry Ring.

  • RASPBERRY RING:

  • 3 (10-ounce) packages frozen red raspberries

  • 2 envelopes plain gelatin

  • 1/2 cup lemon juice

  • 1 1/4 cups boiling water

  • 3/4 cup sugar

  • 1/4 teaspoon salt

  • 3/4 cup cantaloupe balls

  1. Thaw raspberries. Drain, reserving 2 cups syrup (use berries for garnish).


  2. Soften gelatin in lemon juice. Dissolve in boiling water.


  3. Stir in sugar, salt, and reserved raspberry syrup. Chill till partially set.


  4. Add cantaloupe balls. Pour into 5-cup ring mold. Chill till firm.


  5. Serve on a large silver platter surrounded with fruit. Pass additional Creamy Mayonnaise. So pretty.
