Because this soup is not cooked, it is important to use the best wine you have. Strawberry soup is a good way to use up the last of a bottle of fine dessert wine, or an excuse to buy one.

Makes: 4 servings

• 1 quart strawberries, washed and hulled

• 1/4 cup frozen orange juice concentrate, thawed

• 1/3 cup white wine, preferable a sweet dessert wine

• 1/2 cup lowfat sour cream

• 1 teaspoon sugar, or more to taste

• 1/8 teaspoon kosher salt

• 1/4 teaspoon freshly ground pepper

• 6 fresh mint leaves, finely sliced

1. Set 4 of the berries aside for garnish. Puree the remaining berries and the orange juice concentrate and wine until smooth. Add the sour cream, sugar, salt, and pepper. Puree until combined. Chill.




2. Taste and adjust the sugar. Slice the 4 berries. Serve garnished with the sliced berries and mint.
