Low-Carb Italian Wedding Soup

  • 1/2 pound Italian sausage, casing removed

  • 1 small onion, diced

  • 2 cloves garlic, pressed

  • 2 cups kale, chopped

  • 1 (14 1/2-ounce) can chicken broth

  • 2 zucchini, chopped

  • 1/2 teaspoon oregano

  • 1/2 teaspoon marjoram

  • 1/2 teaspoon salt

  • Dash crushed red-pepper flakes to taste

  1. In a large heavy saucepan brown sausage over medium-high heat.

  2. Stir in onion and garlic; cook and stir until soft, about 2 minutes.

  3. Now add the kale and cook another 3 minutes.

  4. Stir in remaining ingredients; bring to a boil, lower heat, and simmer for about 8 to 10 minutes. Soup should be quite thick.
