This recipe only takes less than five minutes to prepare; however, assembling this adorable little guy and getting him dressed for the party takes about ten minutes. He’s well worth the effort and time though; his flavor is a hit with everybody.

Yield: 16 servings
(2-tablespoon each)
Preparation time:
20 minutes or less

• 1 (8-ounce) package fat-free cream cheese, softened

• 3 teaspoons prepared horseradish

• 1 3/4 cups shredded fat-free mozzarella cheese

• FOR DECORATING:

• 1 mini carrot (for nose)

• 1 cherry tomato, cut into a sliver with seeds removed and discarded (for mouth)

• 3 green onions (for arms and scarf)

• 1 orange bell pepper (cut a piece shaped as a hat)

• 5 black olives, use only the ends (for eyes and buttons)

1. In a medium-size mixing bowl stir together the cream cheese, horseradish, and mozzarella cheese.

2. Divide the cheese mixture into three balls with one of the balls smaller than the other two. Place them on a serving plate and shape into a snowman, using the smaller ball for the head. The snowman will be lying down on the plate, not standing up.

3. Use the vegetable pieces and black olives for eyes for decorating the snowman.

4. Serve with reduced-fat crackers.

VARIATION:

Snowball Cheese Ball

Not as adorable as the snowman, this is an easier variation. Place the cheese spread on a small serving plate and shape into a ball, patting the sides to make it look like a snowball. Garnish with a small sprig of silk pine and serve with reduced-fat crackers.
