Peek-a-Boo Meatloaf

This makes just enough for 2 or 3 kids' dinners or to tuck into sandwiches for lunch.

Makes 1 Peek-a-Boo Meatloaf

  • SUPPLIES:

  • large howl, measuring spoons, 6 x 3-inch (15 x 8-cm)

  • mini-loaf pan, fork, spoon

  • INGREDIENTS:

  • 1/2 lb (250 g) uncooked ground beef

  • 1 large egg white

  • 2 Tbsp (25 mL) bread crumbs

  • 1 Tbsp (15 mL) ketchup

  • 1 tsp (5 mL) dried onion flakes

  • 1/2 tsp (2 mL) garlic salt

  • 1/4 tsp (1 mL) chili powder

  • 1/4 tsp (1 mL) dry mustard

  • 1/4 tsp (1 mL) Worcestershire sauce

  • sprinkle of pepper

  • 1 hot dog wiener

  • 1 Tbsp (15 mL) chili sauce

  1. Preheat oven to 350 degrees F (180 degrees C).

  2. Put all the ingredients except the wiener and chili sauce into a large bowl. Use your hands to mix the ingredients together well.

  3. Firmly press about 1/3 of the mixture into the bottom of the mini-loaf pan. Pierce the hot dog 6 times with a fork, Place it in the middle of the loaf. Firmly press the rest of the meat on top, covering the hot dog completely. Use the back of a spoon to spread the chili sauce on top.

  4. Bake 40 minutes, or until the top of the meatloaf is browned and juices around the edge are bubbling. Cool slightly before eating.
