Brownie Macaroons

I love a good macaroon, especially one with a slightly crisp exterior and a chewy interior. Rich and delicious, this version does it. The added bonus of chocolate takes these macaroons in a delectable new direction.

Makes about 5 dozen cookies

  • 1 (19.5 to 19.8 ounce) package brownie mix

  • 1 (7 ounce) package (2 2/3 cups) sweetened shredded

  • coconut

  • 3 tablespoons vegetable oil

  • 2 tablespoons water

  • 2 large eggs

  • 1 teaspoon almond extract

  1. Preheat oven to 350 degrees F. Spray cookie sheets with nonstick cooking spray.

  2. In a large mixing bowl combine brownie mix and coconut;

  3. mix well. Mix in the oil, water, eggs, and almond extract with a wooden spoon until all dry ingredients are moistened (dough will be stiff).

  4. Shape dough into 1-inch balls. Place 2-inches apart on prepared cookie sheets; flatten slightly with bottom of a glass.

  5. Bake 10—12 minutes or until edges are set (centers will be slightly soft.) Transfer cookies to wire rack with metal spatula and cool completely.
