Tortilla Quiches

Makes 4-6 individual quiches

  • 6 small flour tortillas

  • 4 eggs

  • 1 can (12 ounces) evaporated milk

  • 1 tablespoon flour

  • 1 teaspoon salt

  • 1/2 cup chopped cooked ham, bacon, or sausage

  • 1/4 cup chopped green onion

  • 1 cup finely grated Swiss cheese

  • salsa

  • sour cream

  1. Preheat oven to 350 degrees.

  2. Place a tortilla in microwave 20 seconds, or until softened. Spray one side of each tortilla with nonstick cooking spray and press into 6 (10-ounce) custard baking cups. Tortilla will stick up about /2 inch over the top.

  3. In a small bowl, combine eggs, milk, flour, and salt together and set aside.

  4. Divide remaining ingredients into tortilla cups, end with cheese on top. Pour egg mixture over top, about 1/2 cup in each, or until about 2/3 full.

  5. Bake 50 minutes, or until set and lightly browned. Remove from oven and cool slightly before serving.

  6. Serve with salsa and sour cream as a garnish.
