Ice Cream Tiramisu

A delicious return on a minimal work investment.

Makes 9 squares, each 3 inches (7 1/2 cm) square

  • 1 package (12 ounces, or 340 g) ladyfinger cookies

  • 1 quart (570 g) vanilla ice cream, softened

  • 1/2 cup (120 ml) coffee syrup (see note)

  1. Cover the bottom of a 9-inch (23-cm) square baking pan with ladyfingers laid side by side. Pour half of the coffee syrup over the cookies.

  2. Put the ice cream into a mixing bowl and beat it with a wooden spoon until it is easily spreadable.

  3. Working quickly to minimize further melting, spread half of the ice cream on the ladyfingers. Add another layer of ladyfingers and repeat the process with the coffee syrup and ice cream.

  4. Freeze for at least 1 hour. Cut lengthwise and crosswise into thirds.

ADD IT!
Serve with whipped cream, powdered cocoa, or cinnamon as a garnish.

NOTE:
If you can’t find coffee syrup, you can make a cup by combining 1/4 (12 g) instant coffee powder, 1 cup (235 ml) water, and 1 cup (200g) sugar in a small saucepan and cook until the sugar is dissolved.
