This Yam Kippur meal is great served with salsa or yogurt. It also can be served as an appetizer.

Servings: 8

  • 1/2 cup minced scallions

  • 1/2 cup minced green olives

  • 1/2 cup minced sun-dried tomatoes

  • 2 tablespoons minced flat-leaf Italian parsley

  • 2 teaspoons minced fresh dill

  • 2 cups shredded white Cheddar cheese

  • 1 cup shredded Swiss cheese

  • 1/4 cup grated Parmesan cheese, plus extra for garnish

  • 6 eggs

  • 1 3/4 cups all-purpose flour

  • 1 3/4 teaspoons baking powder

  • 3/4 cup dry white wine

  • 1/2 cup vegetable oil

  • 1/2 cup light cream

  • 1 1/2 teaspoons salt

  • 1 teaspoon garlic powder

  • 1/4 teaspoon pepper

  • 1 teaspoon paprika, plus extra for garnish

  1. Mince the scallions, green olives, sun-dried tomatoes, parsley, and dill. Shred the cheeses. Lightly beat the eggs.

  2. Preheat oven to 350 degrees F. Lightly grease a 9x5-inch loaf pan.

  3. In a large bowl, blend the flour and baking powder. Make a well in the center of the dry ingredients and add the wine, the oil, cream, and eggs; stir to mix. Fold in the remaining ingredients. Pour or spoon the mixture into the prepared pan. Sprinkle the top with extra Parmesan cheese and dust with paprika.

  4. Bake for 40 to 45 minutes, until set. Allow to cool before serving.
