If you like pumpkin pie, you will enjoy the lightly spiced pumpkin flavor of this protein-rich bread, full of nuggets of raisins and nuts.

Makes one (1 or 1 1/2 lb) loaf

  • FOR A 1 LB LOAF:

  • 1 1/2 teaspoons active dry yeast

  • 2 cups bread flour

  • 2 tablespoons wheat germ

  • 2 tablespoons powdered milk

  • 2 tablespoons sugar

  • 1/4 teaspoon ground ginger

  • 1/2 teaspoon ground cinnamon

  • 1 teaspoons salt

  • 3/4 cup canned pumpkin (solid pack)

  • 1/4 cup plain yogurt

  • 1/4 cup water

  • 1/4 cup chopped pecans

  • 1/4 cup raisins

  • FOR A 1 1/2 LB LOAF:

  • 2 teaspoons active dry yeast

  • 3 cups bread flour

  • 3 tablespoons wheat germ

  • 3 tablespoons powdered milk

  • 3 tablespoons sugar

  • 1/2 teaspoon ground ginger

  • 3/4 teaspoon ground cinnamon

  • 1 1/2 teaspoons salt

  • 1 cup plus 2 tablespoons canned pumpkin (solid pack)

  • 1/3 cup plain yogurt

  • 1/3 cup water

  • 1/3 cup chopped pecans

  • 1/3 cup raisins

  1. Add all ingredients except the pecans and raisins in the order suggested by your manual and process on the basic or raisin bread cycle according to manufacturer's directions.

  2. At the beeper (or at the end of the first kneading) add the pecans and raisins.
