  • 3 lb cheese

  • 1/2 cup milk

  • 1 tablespoon butter

  • 1 tablespoon corn starch

  • 1/4 teaspoon each salt and mustard and a little cayenne pepper

  • crackers or bread toasted on one side

  1. The cornstarch is cooked in the butter.

  2. Then the milk is gradually added and cooked two minutes.

  3. Then the cheese is added until it is melted.

  4. Season and serve on crackers or bread toasted on one side, the rarebit being poured on the toasted side.
