Cheri Romanowski began making cactus jelly at home and now has a company called Cheri's Desert Harvest that produces jelly, syrup, and candies from prickly pear fruit. Her syrup sells nationwide by the palletful to restaurants for use in prickly pear margaritas. Cheri is a very hands-on company owner, frequently found in her factory’s kitchen stirring a big vat of deep-magenta juice. She developed the following recipe using her Cheri's Desert Harvest Prickly Pear Jelly.

Makes 12 large muffins or 18 smaller ones

  • 2 cups all-purpose flour

  • 1/4 cup sugar

  • 3 teaspoons baking powder

  • 1/2 teaspoon salt

  • 1 1/4 cup vegetable oil

  • 1 egg, slightly beaten

  • 1 cup milk

  • 1/4 cup prickly pear jelly (recipe follows)

  1. Preheat oven to 400 degrees F.

  2. Sift flour, sugar, baking powder, and salt together and set aside.

  3. Mix oil, egg, and milk and add to dry ingredients. Stir until moistened. Batter will be lumpy. Fill greased muffin tins half full. Place 1 teaspoon of jelly in the exact center of each muffin, with jelly not touching edges. Add remaining batter, covering jelly, so that tins are two-thirds full.

  4. Bake for 20 to 25 minutes or until golden brown.
