A redo of traditional date cake or what is also referred to as 'matrimonial' cake. The pineapple adds a fresh, new taste to this old favorite. Delicious warm from the oven topped with a scoop of vanilla ice cream or frozen yogurt. Yummmmmmmmmy!

Makes one 9-inch square cake

  • CAKE INGREDIENTS:

  • 1 1/2 cups unbleached white flour (or use a half whole wheat and half white flour)

  • 1/2 cup wheat bran (not cereal)

  • 1/2 teaspoon EACH baking soda, salt and baking powder

  • 1 cup chilled butter

  • 1/2 cup dark brown sugar

  • 2 cup oatmeal

  • PINEAPPLE DATE FILLING:

  • 1 cup chopped pitted dates

  • 1/2 cup raisins

  • 14 oz. can crushed pineapple, with juice

  • grated rind of one lemon

  • 1 teaspoon ground cinnamon

  1. Preheat oven to 350 degrees F. Grease and flour a 9-inch square cake pan.

  2. Blend together the first 5 dry ingredients and set aside.

  3. In a large bowl, cut the butter into the brown sugar, gradually add the dry ingredients, mix will be crumbly.

  4. In a small saucepan, combine the filling ingredients and cook over low heat for 10-15 minutes, stirring occasionally until mixture is thick. Remove from heat and cool slightly.

  5. Spread half the dry mixture evenly in prepared cake pan, cover with filling and then remaining dry ingredients on top.

  6. Bake 35-40 minutes until golden brown. Allow to set at least 5 minutes before cutting cake.
