This cookie began life as a coconut sugar cookie that tasted great, but was more than a little time consuming. Ironically, this quick variation is far grander in both appearance and taste thanks to the simplicity of flavors and double—swirl design.

Makes about 4 dozen palmiers.

  • 1 (17.3-ounce) package frozen puff pastry (2 sheets), thawed for 30 minutes

  • 4 tablespoons sugar, divided use

  • 1 large egg

  • 1 tablespoon dark rum

  • 3/4 cup sweetened flake coconut, very finely chopped

  • 1 teaspoon grated lime zest

  1. Preheat oven to 400 degrees F. Line baking sheets with parchment paper.

  2. Unfold 1 of the pastry sheets on a surface sprinkled with 2 tablespoons sugar; roll out sheet to a 16x12-inch rectangle. Repeat with the second sheet.

  3. Combine egg and rum in a small cup. Brush pastry sheets with half of mixture.

  4. In a small bowl combine chopped coconut, lime zest, and remaining 2 tablespoons sugar; sprinkle over pastry sheets. Starting at each short end, roll pastry up tightly, jelly roll—fashion, to meet in center. (The shape of the roll resembles a scroll.) Brush with remaining egg mixture.

  5. Cut each roll into 1/2—inch-thick slices. Place 2 inches apart on prepared sheets.

  6. Bake for 8—10 minutes or until palmiers are golden.
