This spice mix is the true spirit of Vintage. I use this spice mix in roasting meats, in BBQ spice rubs, and BBQ sauces. Sprinkle a little or a lot on chicken breasts and then grill or fry them. Sprinkle some on a steak or put a little in a slow cooked stew. It's great stuff to have around to add distinction to your cooking.

Makes 1 cup dry spice mix

• 2 tablespoons good quality mild New Mexico chile powder

• 1 tablespoon Spanish paprika

• 1 tablespoon fresh ground black pepper

• 1 tablespoon kosher salt

• 1 tablespoon ground toasted cumin seed

• 1 tablespoon whole fennel seed

• 1 tablespoon curry powder

• 1 tablespoon dry whole-leaf thyme

• 1 tablespoon cayenne pepper

• 1 tablespoon onion powder

• 1 tablespoon granulated garlic

1. Mix all the ingredients together and store in a tightly covered container. It's at its best for 30 days.
