Crustless Ricotta Cheesecakes

Simple and satisfying, these little "cakes" are a breeze to make.

  • 2 cups whole-milk ricotta cheese

  • 2 eggs

  • 1/2 cup granulated sugar

  • 1/4 cup all-purpose flour

  • 1 tablespoon lemon zest

  • Pinch salt

  • Pinch ground nutmeg

  • 1 tablespoon butter

  1. Preheat oven to 300 degrees F.

  2. Place all the ingredients except the butter into a food processor and process until smooth.

  3. Grease two 8-ounce ramekins with the butter and divide the cake mix between the ramekins.

  4. Bake for 20 minutes or until a toothpick inserted in the center comes out clean. Cool to room temperature before serving.

New York Vs. Italian Cheesecake:
New York cheesecake is usually made from cream cheese and is very fine and creamy in texture. Italian cheesecake is usually made from ricotta cheese and has a more coarse texture. Both styles have their fans and defenders, and both have their virtues. You could make the recipe here with cream cheese in place of the ricotta.
