Creamed Turkey Legs

Served on split biscuits, this is comfort food to have when you are missing the warm flavors of Thanksgiving and don’t have time to roast a turkey with all the trimmings. Cranberry sauce on the side ft a nice, tart addition.

Serves 4

  • 2 turkey legs

  • 2 tablespoons butter

  • 2 tablespoons flour

  • 1 cup milk

  • 1 sprig thyme

  • 1/2 teaspoon pepper

  • salt to taste

  1. Preheat oven to 350 degrees F.

  2. Place turkey legs in a roasting pan. Roast about 1 hour, until a meat thermometer shows that the internal temperature is 165 degrees F.

  3. Take the meat off the bone; discard the skin and bones. Cut or tear the meat into bite-size pieces.

  4. Melt butter in a skillet. Add flour; stir and cook for a few minutes. Add milk and thyme, and stir until smooth.

  5. Add turkey; simmer until sauce is thickened. If it becomes too thick, add more milk and cook a little longer.

  6. Remove from heat. Remove thyme sprig, and season creamed turkey with salt and pepper.

  7. To serve, spoon over split biscuits or buttered toast points.
