Tropical Chicken Salad (Serves 4)

Ingredients:

2 cup Cooked Chicken diced
1 Small Cantaloup
1/2 Small Honeydew Melon
1 Can Mandarin Oranges Drained
(Can use fresh cut in Pieces)
Fresh Leaf Lettuce or Mescalin Mix
1 Cup Green Grapes
1 Cup Fresh Strawberries
1 Banana Sliced
2 T. Minced Green Onions
1/2 Cup Sliced Celery

Place chicken in a bowl and chill. Cut up melons using a melon baller. Toss all ingredients, except lettuce leaves with the chicken. Add 1/2 cup dressing just before serving &toss lightly. Serve over lettuce leaves or baby greens spooning more dressing on top. You may also replace the chicken with peeled shrimp, scallops, salmon or sworfish. Accompany it with your favorite roll, croissant or fresh bread and a fruity wine to perfect.

Orange Dressing

1 Egg 1/2 Cup Orange Juice
2T Sugar
1 teas. Salt
1 Teas Paprika
1/2 Teas. Celery Seed
3/4 Cup Salad Oil

In a blender, blend together all ingredients, except the oil. Slowly add oil beating until smooth.
