I've thought this is a really good recipe for roasted garlic:
Remove only the loose outer papery skins from a head of garlic, keeping the head whole; cute 1/4" to 1/2" off of the top to expose cloves.
Drizzle with olive oil and sprinkle with favorite herbs (rosemary and thyme work well, but try others). Loosely wrap in foil and roast at 350 degrees 30-45 minutes until the cloves are soft. Let cool sightly and squeeze the pulp out of the skins. The slightly nutty sweet garlic is delicious on bread,but try in on grilled meat or fish or mix into mashed potatoes (!) and as a topping for baked potatoes. Another thought: rub under skin of chickn before roasting. Enjoy!
