Chicken and Dressing Casserole

2 cups diced chicken, cooked
1 can cream of chicken soup
1/2 cup mayonnaise
1 package frozen broccoli
1 package Stove Top chicken stuffing
Crackers or bread crumbs for topping

Mix chicken, soup and mayonnaise; set aside. Cook broccoli; drain and set aside. Prepare dressing according to package directions and spread in 9-inch-by-13-inch pan. Spread broccoli over dressing and top with the chicken mixture. Sprinkle with cracker crumbs. Bake at 350 degrees for 45 minutes.

Daisy: I didn't have frozen broccoli, just fresh, so I cooked it and used it - it worked great. Also, I didn't have Stove Top, only a package of Pepperidge Farm stuffing but I fixed it according to the instructions and added some extra onion to it because we really like onions. I also sprinkled on a little sage and poultry seasoning because we like things well seasoned. Then I sprinkled some of the dry stuffing mix on top of the casserole. I was skeptical of this recipe at first, but was in a hurry one night and had all the ingredients on hand (well sort of) so I gave it a try. After tasting it, my husband said, "We should have this more often."

I got this recipe from a woman on a local radio show and everything I've ever tried of hers, I've liked. She also had a recipe for a cranberry-pineapple-orange sauce that is an outstanding complement to this recipe. I like it better than the traditional cranberry-orange sauce.
