My mom used to make Martha Washingtons and after she died I searched high and low for the recipie. I finally found this one called Dolley Madisons to which I add about 1/2 cup of chopped maraschino cherries. You could easily add coconut.

Ingredients:
5 c. confectioners' sugar, sifted
1/2 c (1 stick) salted butter, softened
1 egg white (or equivalent of Egg Beaters egg substitute)
1 1/2 t. vanilla extract
1/2 c. chopped maraschino cherries

Combine half of powdered sugar with butter in one bowl and the other half with egg in another bowl. Cream both mixtures as if for a cake then combine in one bowl. Add vanilla and cherries and knead into ball. (Optional: turn out onto damp surface and continue to knead until light and creamy).

Wrap fondant ball in waxed paper and airtight container and refrigerate 24 hrs. Form into 1/2 inch balls and hand-dip in milk chocolate.
