Pat - I have been using this recipe for years - in fact, I just frosted a lemon filled devils food cake with it today.
2 Egg whites 1 1/2 C. sugar 1/3 C. water 2 tsp light corn syrup 1 tsp vanilla or 1/2 tsp almond extract
Combine unbeaten egg whites, sugar, water & corn syrup in top of double boiler; beat just enough to blend the ingredients.
Place over rapidly boiling water nad beat with electri mixer until mixture is light & fluffy & will hold its shape. Remove from heat; add extract; continue beating until frosting is stiff enough to stand in peaks. Time: 7 minutes!
