Sharon, freshly made noodles freeze perfectly - I prefer that to drying them (if you're going to dry noodles, why make them fresh in the first place???) To freeze them, I simply put them as I make them on a floured pan or board - not too much flour, but just make sure they get LIGHTLY sprinkled so they don't stick together. I toss them with my hands in the flour and put them in freezer bags while they are still very fresh and pliable. Usually I freeze them in one serving portions because it's easy then to remove them from their freezer baggie and plop them still frozen in boiling water. Or, if you want to defrost first, smaller coils will thaw on the counter quite quickly. Try it - works great!
