Eggs in Bacon Rings
A family favorite! As eggs go..fix as many as you would normally consume...take in mind that the meat, egg, and toast come all wrapped up together. The final product doesn't appear to be intimidating...but they are filling.

Spray a muffin tin with cooking spray or oil lightly.
In each cup of muffin tin put ingredients in this order:
Catsup or chili sauce (about 1 tbsp. per muffin cup or enough to cover bottom)
Bacon strip (partially cooked - enough to bend and not offend); 1 per cup
Egg (crack & drop in); 1 per cup
Butter (smidge)
Paprika

Place filled muffin tin in a preheated 320-325 degree F oven. The times are not exact. Ovens vary and eggs can end up overcooked in no time. At the 20 min. mark, you'll want to jiggle the eggs. If the eggs wiggle alot, don't leave! What you want to avoid is motionless eggs. Better to sit and eye progress than to apologise to the group for the hardened yolks.

After eggs are cooked:
Pineapple ring (trust me); 1 per cup (may be warmed in microwave or in oven)
Toasted English muffin halves or toast; 1 per cup

Score with a knife, around all the eggs, then place the pineapple rings (cross my heart!) and the English muffins on top.

Removal can be interesting. Do not try to scoop them out individually. I find a cookie sheet, put upside-down on top of the muffin tin, the best tool for safe, quick extraction. Just quickly flip the muffin tin and cookie sheet over, tap the bottoms of the occupied spaces, and gently lift the muffin tin. If you notice that some eggs are stuck, even just one, you'll have to flip it all back over, remove pineapple and English muffins, score around the culprit(s), replace toppings, and flip the whole thing over again.

Include knives in the placesettings. The bacon and English muffins usually put up a fight and can cause a shifting of the layers, or worse, complete destruction by simply cutting it. (this was hard! please forgive any errors, lack of any needed info, and the obvious absence of direction in my directions).
