Easy Pizza Crust

You can use a basic biscuit or scone recipe for a quick pizza base.

This is excellent:

Pizza Base
2 cups self-raising flour*
1 teaspoon salt
1 tablespoon soft butter
1/2 cup grated cheese
3/4 cup milk
pinch cayenne pepper
1/2 teaspoon dry mustard**

*self-rising flour or all-purpose flour with rising agent
**I add 1/2-1 teaspoon mixed dried herbs - experiment after trying it first

Sift the dry ingredients.
Rub the butter into the flour until is resembles bread crumbs [I use a food-processor].
Add the cheese, tossing lightly, to coat the shredds.
Stir in milk and mix to soft dough.
Remove and knead lightly until smooth. [not like bread-making]
Roll out 1/4" thick to fit selected lightly oiled pizza tray [I like square ones]
Take some oil and LIGHTLY oil the surface of the pizza.
Fun-time:
I use 3 tb pizza sauce/spaghetti sauce/tomato sauce to spread on top.
I spread 1/2 medium onion, finely chopped and cooked with 4 rashers bacon, finely chopped and cooked.
Over this I sprinkle, liberally, grated cheese of choice.

Bake in a pre-heated oven at 400-425F for 12-15 mins: watch for overcooking the cheese and undercooking the base. My oven [fan-forced] likes 375-400F for 15-20mins [tempermental]
