POTATO SALAD For 6 people
5 Medium size potatoes Peel and slice and place in boiling water
Cook potatoes until tender, about 45 mins
Place two eggs in a pan and boil, turn off burner and cover keeps the egg from breaking
Dice about 1/4 onion, color your liking
Dice 1 medium pickle or two the size of you thumb
Drain potatoes well and mash (I have a potato shredder, you squeeze them through) Once mashed mix in 3 rounded tbs of mayo and 2 mustard and mix in the diced egg and pickles and onion If you like it tart add more mustard and some vinegar, cap full salt to taste
