Italian Lemon Ice Source: Pampered Chef pamphlet, shared by Sarah Gruenwald
2 cups water 2/3 cup sugar zest of 2 lemons, finely cut 1 cup of lemon juice (fresh or reconstituted)
Heat water and sugar to boiling. Simmer 5 additional minutes. Remove from heat: stir in lemon juice and lemon zest. Cool to room temp. Divide the mixture evenly (depending on ice shaving machine being used) among ice cube trays or Ice Shaver tubs. Freeze until firm. Remove from trays or tubs and shave. Serve garnished with a small thin slice of lemon.
