PEANUT BUTTER ICE CREAM
1 recipe Sweet Cream Base (follows) 1/3 cup smooth peanut butter 1/2 cup chopped roasted peanuts (salted or not, is up to your preference.
Pour 1 cup of cream base into a separate bowl and whisk in the peanut butter, a little at a time, until well mixed. Fold in remaining cream base and mix well. Place in ice cream maker and freeze according to manufacturer's specifications. Add chopped peanuts the last five minutes of freezing time. (Now I don't see why you simply don't use honey roasted super chunk, to begin with.)
Makes one generous quart.
PEANUT BUTTER FUDGE SWIRL Melt 1 cup coarsley chopped chocolate fudge in top of double boiler, or microwave. Cool and pour it slowly into the ice cream 5 minutes fore its done freezing. You should end up with a beautiful chocolate fudge swirl.
SWEET CREAM BASE--RICH and YUMMY
Whisk 2 large eggs in a bowl until light and fluffy (2 minutes). Whisk in 2/3 cup sugar, a little at a time; whisk until fully incorporated (besure your sugar is well disolved, or your ice cream will be grainy). Pour in 2 cups heavy cream or whipping cream, milk and whisk to blend.
I have made this with Mocha Mix (non-dairy liquid creamer) and have noticed no forfeit of quality.
NOTE: Some people are concerned about bacteria. You can heat these custard bases over a low heat for 2 to 5 minutes and then cool before processing.
Or, microwave for up to 2 minutes. Cool and process.
SWEET CREAM BASE--RICH no eggs
Pour 2 cups whipping cream into a bowl and whisk in 3/4 cup sugar, a little at a time; whisk until fully incorporated (be sure your sugar is well disolved, or your ice cream will be grainy). Whisk in 2/3 cup half and half.
SWEET BASE--CONDENSED MILK
Whisk 2 cups light cream and 1 cup condensed milk together in a bowl until well blended.
